Brisolée and Vineyards
Walking and Lunch Tours
Every autumn during the grape picking season, there is a tradition to gather chestnuts and then prepare a simple, delicious meal called Brisolée. It consists of freshly roasted chestnuts accompanied by other autumn specialities of the region: rye bread, mountain cheese, dried meat, grapes, apple slices and moût, which is the unfermented juice from the first pressing of grapes.
Our full-day trip takes us on a walking tour of the golden leafed vineyards to visit the charming hamlets of small, stone and slate roofed houses that were once accommodations for the vineyard workers. We’ll see grape vines growing on the amazingly steep hillsides, and see the ingenious mechanical devices the Swiss have invented to get the containers of hand-picked grapes off the side of the mountain and to the wine press.
For lunch, we savour the brisolée and moût while sitting on a terrace in warm autumn sun with a view of the surrounding vineyards and high-mountain peaks.
In the afternoon we visit the old village of Aigle with it’s picturesque chateau, and stroll through the surrounding ancient vineyards that date back to the time when the Romans established wine making in the region.
